Ben's Preschool Birthday snack!

Ben was able to take a special snack into preschool for his birthday. We made cupcakes together and then I let him pick out what scrapbook paper he liked the best and I made cupcake wrappers for them. He liked the animal prints the best, I don't blame him!

Caramel Apples!

I love the fall! Mostly because I love the food that comes with the season! One of my favorites is caramel apples!

Ben has two really great preschool teachers. One day, just for the heck of it, I made them each a caramel apple and then Ben signed a little thank you tag to attach. They were so thrilled! Of course I made a few for our family to enjoy too! YUM!!!

Gooey Caramel Pecan Cake!

This is the cake I made for Connie's birthday celebration. It is soooo good and so rich!

Bake two round devils food cakes. the middle has a gooey caramel pecan filling (see below) and it is frosted with creamy chocolate frosting and I spread the rest of the caramel pecan on top. MMMMMMMMM!

Gooey Caramel Pecan filling (and topping)
20-30 unwrapped caramels
1/3 cup butter
1/3 cup heavy whipping cream

Melt all three ingredients together in a saucepan over medium heat, stirring frequently until smooth. (about 6-8 minutes)
Let cool just enough to be spreadable but not runny.

Hey, I said it was delicious, I never said anything about being healthy!!!
